Ingredients

  • 6 large eggs, hard-boiled, peeled, and halved
  • ½ cup kimchi
  • ¼ cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh lemon juice
  • ¼ teaspoon gochujang (Korean red chile paste)
  • ¼ teaspoon kosher salt
  • Pinch freshly ground black pepper
  • Black and white sesame seeds, for sprinkling

Preparation

  1. Carefully scoop out the yolks from the halved eggs. Put the yolks into the work bowl fitted with the metal chopping blade. Process until smooth. Pulse in the remaining ingredients (except for the sesame seeds).
  2. Taste and adjust seasoning as desired.
  3. Spoon or pipe the filling into the center of each egg white. Sprinkle with the sesame seeds before serving.
