Dried Cherry & Hazelnut Loaf

Makes one 1½-pound loaf

Cherries and hazelnuts are a winning combination, making a loaf of bread that’s beautiful when sliced.

Ingredients

  • 1¼cups low-fat buttermilk, room temperature
  • ¾teaspoon kosher salt
  • 1tablespoon unsalted butter, room temperature, cut into ½-inch pieces
  • 1tablespoon pure maple syrup
  • 2cups whole-wheat flour
  • 1cup unbleached all-purpose flour
  • 2¼teaspoons yeast (active dry, instant, or bread machine)
  • 1/3cup dried cherries
  • 1/3cup hazelnuts, roughly chopped

Preparation

  1. 1. Put all ingredients, except the cherries and hazelnuts, in the order listed into the bread pan fitted with the kneading paddle. Secure the bread pan in the Cuisinart® Bread Maker.
  2. 2. Press the PROG button to select the Whole Wheat program. Select the desired Crust Color and Loaf Size. Press START/STOP to begin the bread-making process.
  3. 3. When the add-in signal sounds, add the cherries and hazelnuts. If desired, when the paddle signal sounds, press START/STOP to pause the unit; remove the dough and kneading paddle, reshape the dough, and replace in the bread pan. Press START/STOP to continue.
  4. 4. When the cycle is complete, remove the bread pan from the machine, and then transfer the bread to a wire rack to cool completely before slicing.
