Crispy Cauliflower with Giardiniera

Makes about 4 cups

These cauliflower bites are super easy and deliciously crispy! Perfect for entertaining or a quick weeknight meal.

Ingredients

  • 3 large eggs
  • 2 cups panko breadcrumbs
  • ½ cup grated parmesan
  • 2teaspoons Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1teaspoon kosher salt, plus more to taste
  • 1small head cauliflower, cut into medium florets
  • olive oil, for drizzling
  • ¼ cup store bought giardiniera

Preparation

  1. Put the eggs and panko into individual containers large enough for dipping the cauliflower. Whisk the eggs until homogonous. Add the parmesan, Italian seasoning, onion powder, garlic powder, and 1 teaspoon of salt to the panko; stir to combine.
  2. Dip the cauliflower into egg and then coat evenly with the panko breadcrumb mixture.
  3. Arrange the breaded cauliflower into a single layer in the AirFryer Basket and drizzle with olive oil. Place the basket in the AirFryer. Select AirFry, and set the time to 15 minutes and the temperature to 400°F. AirFry, flipping halfway through, until cauliflower is cooked through and evenly browned on both sides
  4. When the cauliflower is finished cooking, remove from the basket and sprinklewith additional salt if desired. Top with giardiniera vegetables. Serve immediately.
